Suzee's Yummy Beef Chili

2 lbs browned lean ground beef
1 boneless chuck pot roast, 3 - 5 lbs, cooked, trimmed of fat and cubed in bite sized pieces
3 large sweet onions, diced and caramelized
1 can black beans, rinsed and drained, 15 oz
1 can small pink beans, rinsed and drained, 15oz
1 can red kidney beans, rinsed and drained, 15 oz
1 can niblets corn, 11 oz
3 cans low sugar tomato sauce, 24 oz
1/4 c chili powder
2 T cumin
1 t ground smoked chipotle, or more to taste
1 t garlic powder
1 t cinnamon

Combine all ingredients and heat through.

Serve over a hearty salad (no wimpy greens - something like romaine to hold up to the heat and flavor)

Or serve with a sprinkle of mexican cheese shreds and a dollop of sour cream with a few tortilla chips

Or in an omlet with american cheese (this is especially tasty!)

Freezes very well.
